I need to do a detailed plan of what a company would need to put in place to successfully support the introduction of a new contract catering business

you could start by looking into the number of contracts that the customer is likely to have in a day/ year and then look into the technology requirements for this.
If a customer is only taking 100 contracts a year they probanly will not need the latest technology or sql servers etc.

Technology greatly effects businesses as almost every business is using some type of technology whether it be a server, a computer, a printer, or even a type writer. I work at a webhosting business and we are always getting newer technology in, we keep our old until it is no longer usable for our needs but we have a good couple hundred desktops and a good hundred or so tablet pcs and laptops.
Not including all of the servers and everything else of the framework.
It depends on what your estimated contracts number is. Lots of contracts means lots of resources.
